Sugar and sweeteners are widely consumed substances used to add sweetness to food and beverages. They are often interchangeably used, but there are distinct differences between the two.
Sugar:
Sugar refers to a group of carbohydrates that are naturally present in many fruits, vegetables, and milk products. The most commonly known type of sugar is sucrose, which is extracted from sugarcane or sugar beets. It is made up of glucose and fructose molecules. Sugar is naturally sweet and is commonly used as a sweetening agent in various food and drink preparations.
Consuming sugar provides energy to the body as it is broken down into glucose during digestion. However, excessive consumption of sugar can lead to various health issues such as weight gain, tooth decay, and increased risk of chronic diseases like diabetes and heart disease.
There are different types of sugar available:
- Granulated Sugar: This is the regular table sugar that most people use for everyday purposes. It comes in the form of white crystals.
- Confectioners' Sugar: Also known as powdered sugar or icing sugar, it is finely ground and often used for dusting or icing desserts.
- Brown Sugar: This sugar contains molasses, which gives it a brown color. It has a slightly different flavor profile compared to granulated sugar.
- Raw Sugar: This sugar is less processed and retains some of the natural molasses content, making it slightly darker in color and delivering a richer flavor.
Sweeteners:
Sweeteners, on the other hand, are substances used to provide sweetness but are not necessarily derived from sugar. They are often used as alternatives to sugar to reduce calorie intake, manage blood sugar levels, or cater to dietary restrictions.
Artificial sweeteners are synthetic compounds that provide sweetness without the added calories. Some common artificial sweeteners include aspartame, saccharin, sucralose, and acesulfame potassium. These sweeteners are intensely sweet, so smaller quantities are needed to achieve the desired level of sweetness compared to sugar. They are often used in sugar-free or low-calorie food and drinks.
Natural sweeteners are derived from natural sources and may have a lower calorie content compared to sugar. Examples of natural sweeteners include stevia, monk fruit extract, and agave nectar. These sweeteners are often marketed as healthier alternatives to sugar and may have different taste profiles.
It is important to note that while sweeteners may provide a sugar-like sweetness, they may not necessarily have the same functional properties as sugar, such as browning or binding in baking.
When using sweeteners, it is essential to consider their sweetness intensity and any specific usage guidelines provided by the manufacturer. Some people may also have sensitivities or allergies to certain sweeteners, so it is important to be aware of individual dietary needs and preferences.

This year, world sugar production is expected to rise by 3% to 193M tons. The growth will be encouraged by favorable weather conditions in most of the largest producing countries, as well as the providing exemptions on the neonicotinoid usage against plant diseases and blights in France, Germany and the UK. The drop in sugar production and shipments from Brazil will be offset by large volumes coming from Thailand, which will boost global exports by +2.6% y-o-y. The increased supply in the world market is to keep sugar prices relatively stable over the next two years.
